Shredding Methods:
  • Two Forks: Use one fork to hold the chicken in place while shredding the chicken with another fork.  Use small, short movements as you shred the chicken.
  • Hand Shredding: Pieces can be any size you like so get in there and pull that chicken apart until the chicken is shredded to your liking.
  • Food Processor: Break the chicken up into manageable size pieces, working in batches.  Add chicken to the processor and pulse until uniformly shredded.  Be sure not to go overboard so you don’t end up with a mushy batch of chicken.  Repeat until all chicken is shredded.
  • Stand Mixer: Use the paddle attachment on the mixer to mix on medium-low speed until chicken chunks are shredded.
Number of servings will vary depending on the number and weight of chicken breasts used.  For the purpose of this recipe, the nutritional values shown reflect information for 1 serving out of 4 servings total when using 2 average size chicken breasts.  Values may vary slightly depending on the specific brand and amount of ingredients used.
To determine the size of one serving, prepare the recipe as per instructions above, then weigh the whole recipe when done.  Divide the total weight of ingredients only by 4, which will give you the weight of one serving size.
